Step 1

Cut 8 10 cm rounds from each sheet of pastry. Stick two pastry rounds together by brushing with a little butter. Heat a knob of butter in a frying pan over a low heat. place the joined pastery rounds into a pan and fry until golden and crisp. repeat until all the pastry is used.

Step 2

to make custard, heat milk in a saucepan to almost boiling. Add the sugar and almonds and mix well. remove from heat and add the eggs one at a time. whisking thoroughlyas you go. Add orange blossom water, put back on heat and stir continually while heating through for 5 minutes, until thickened. Keep warm
