  • 10-12 pieces of fresh fruit, such as figs, plums or apricots
  • a bunch of cilantro, roughly chopped
  • sea salt and ground black pepper

  • 4 garlic cloves, chopped
  • 2 1/2 piece fresh ginger, peeled and chopped
  • 1 red chile, seeded and chopped
  • generous amount of sea salt
  • cilantro and flat leaf parsley, chopped
  • 1-2 teaspoons ground cumin
  • 1-2 teaspoons ground coriander
  • 3 tablespoons smen, softened butter or olive oil.

Step 1

First, make smen coating, using mortar and pestle, pound the garlic, ginger and chile with enough salt to form coarse paste, add the cilantro and parsley. pound to paste and stir in the ground cumin and coriander, put the smen ina bowl and beat into a paste until thoroughly mixed.

Step 2

Cut small incisions in the leg of lamb with a sharp knife and rub the spicy smen all over the meat, making sure it goes into the incisions. cover and leave in the refridgerator for at least two  hours.

Step 3

Preheat the oven to 200 degrees. transfer the leg of lamb to a roating dish and pour water around it, Roast in a pre-heated oven for about an hour 15 min, basting from time to time, untill nicely browned, spoon the honey over the lamb and place the fresh figs, plums and apricots around the meat , return the dish in the oven for a further 15 min.

Put the roasted lamb in serving dish and let it rest for 15 minutes before serving, meanwhile heat the juices in the roasting pan, season with salt and pepper, and pour over the roasted lamb, serve accompanied by a mound of plain buttery couscous tossed with chopped almonds and pistachios.
