Step 1

Preheat the oven at 200 degrees, put eggplant on a baking sheet and bake them in the oven for 30 minutes, until soft when you press them with a finger. put the tomatoes into a oven proof dish, pour over half the olive oil and pop them into preheatede oven with the eggplants.

Step 2

Remove the eggplant and tamatoes fro the oven and leave until cool enough to handle. using a knife , cut the eggplant in half, scoop out the warm flesh, and chop into a pulp. skin the tomatoes, chop into pulp.

Step 3

Heat the rest of the oil in a heavy based skillet, add garlic and saute until it begins to color, stirring constantly. add the tomatoes and harissa and cook over a medium heat for 5 – 10 minutes, until thick and pulpy.
